Pasta in White Sauce

Pasta…a simple yet versatile dish that you can prep during the week for a quick fresh meal. Once ingredients are prepped, this dish usually takes pasta boil time +3 minutes to cook, so a quick win for our busy lives.

Ingredients:
  • 1 cup dried pasta
  • 100 g smoked or cured salmon (or any other smoked/cured fish) – can be replaced with prosciutto
  • 1/2 cup mushrooms (fresh, frozen or canned)
  • 1 cup vegetables (peper/zucchini)
  • 1/3 cup grated parmegiano
  • 1 cup cooking cream
  • 2 tbsp olive oil (or any other cooking oil)

Seasoning:

  • salt
  • pepper
Quick Guide:
  • Heat a pot with boiling water and add pasta – cook as per instructions on the packaging. You want the pasta to be have a bite – al dente.
  • On the side, heat the pan with the olive oil then sear the mushrooms until lightly cooked
  • Add in the vegetables and sear those as well for 1-2 min together.
  • Add fish to the pan and mix well before adding the liquids
  • Add in the cream, mix well, bring to simmer. Season to taste.
  • Add in the pasta, mix well, then turn off the heat, cover and let it rest for 1 min so the pasta coats with sauce.

Detailed Guide
1.  Prepare the ingredients
This dish takes advantage of well timed cooking. It’s very easy to make and very fulfilling. An essential part is to prepare all of your ingredients to have them at hand, as the dish will be fast. Cut all ingredients in medium-sized cubes.

2.  Start the pasta and the vegetables
Heat a pot with boiling water and cook the pasta using the instructions on the packaging. You want the pasta to retain a bite to it – to be al-dente. In the same time, heat a pan with the 2 tbsp of olive oil and then sear the mushrooms in the pan, until lightly cooked. Add in the vegetables and cook those as well for 2 min.


3. Add the meat and finish with cream
After vegetables have been slightly cooked, add in the fish or prosciutto and stir in for 1-2 min.
Add in the cream and season to taste. Bring to a simmer and stop the heat if the pasta is not yet done. Once the pasta is drained add it to the pan and mix well to coat it sauce.
